Recording audio streams is very easy but does anyone know how to record video streams?
I know Yahoo and CNN try to hide the source of the streams but that is easy to find out if you use Snort and monitor raw data. Then one can use some shareware program to record it. But is there a way to tap into the stream somehow and record it?

Yes, there are programs that do this, but I don't remember the name. Anyway, you've got the answer: yes.

If you disable hardware acceleration you can then use any standard screen capture program. Not perfect, but a simple solution.

Otherwise, this is the only app I know that can rip a stream - I tried it but didn't like it much, others seem to be impressed:

I think I've had it installed once but it seemed not to work as I wanted or there was a problem. I'll try it again.
