MIDI control of Synthersizer modules

I'm just getting to grips with the whole VST concept.
I have quite a lot of modules that I got with the 2 Pulsar cards I have plus a lot of free stuff.
I like the Modular synths but was wondering if there are any synths out there that allow more MIDI control of the functions of individual modules.
For example, I might want to control a filter's parameters or osc. mix levels, with different MIDI controllers. The possibilities are endless.
I have a Matrix 1000 which is basically an analog synth with digital (MIDI) control of a very limited number of parameters. The "real" instrument version of what could be a very powerful VST instrument.
Any suggestions welcome.
